Lamb Karahi (Layered Lamb Curry with Spinach)
This ancient dish was created for the nobles with its 3 levels of cooking, from pounding of dry spices to blend evenly (in such a way no machine or blender can replicate), to having the meat marinade and tenderize while being cooked in an earthy garlic and ginger blend to the final level of having fresh vegetables of baby spinach, coriander and green chilies stirred in until they dissolve completely and blend into the gravy.
